Comfort Food

Do you have a favorite dish that truly gives you comfort when you prepare it and share it with your friends/family?

I have a chicken and rice casserole that I learned to make way back in 1990 when we were stationed in the Panama Canal Zone. I found the recipe in a cookbook from my grandmother (AKA Mama Mac). 

It is called Chicken Easy. Simple 5 ingredients, nothing really to write home about.  I had very little cooking experience and didn't even know if my husband would eat what I was preparing for dinner. I made it one night 30 years ago and I added things to the recipe and tweaked how seasoned it and prepared it over the years. 

I have often kept the ingredients on hand because If I have one of those nights where I just don't know what to eat or cook for dinner, the chicken casserole is usually eaten and enjoyed by everyone. 

In this crazy time we call the year 2020, lots of things are undecided and many things are constantly changing, it is very comforting to have food that we recall from years past to give us time to reminisce about those family members no longer with us or just to enjoy a food that makes us feel good. 

Other things that give me comfort these days are

A drive /visit to the park and just be (leave the phone in my car, too)

Sit outside and watch the sun come up on a cool morning

A talk with a friend (and realize I am not alone in my struggles)

A hot cup of coffee when the house is quiet

I hope this gives you comfort during what ever you may be dealing with. 

No matter who is in the White House, God is still on the throne and that is what we must focus on. 

God is in control and God is not surprised by anything that happens to his people.
